How Could I Forget?

It has been brought to my attention that my list of "cave" foods is sorely incomplete. Yep, it's true...I forgot one! (some of you wouldn't be surprised by that!) I got an email from the fabulous Miss Andi this morning who informed me that I left off poffertjes. Anyone who knew my in my collegiate days knows of my obsessive love for the little pockets of heaven! I extolled the virtues of the poffertjes this time last year, as they are a mainstay of Tulip Time in good 'ole Pella. No Tulip Time for me this year as I'm going to Vegas on Thursday and Michigan a week from Tuesday. Can you say busy? Thank goodness I bought a poffertje pan last year! I'm not sure it'll be quite the same, though! Oh how I love the poffertjes. I usually eat them 3 times a day. They're small, but packed with a punch of yummy goodness!!!
